Almond Crusted Chicken Breast

As I'm preparing to officially start our Master's Hammer & Chisel group next week, I was looking thru some of the recipes they have in the book and decided I HAD to try this one!!


6 (4oz) Raw Chicken Breasts
1/2 cup Almond Flour
1 tsp minced garlic
1/4 tsp lemon peel (lemon zest)
1/4 tsp Sea Salt
1/4 tsp Black Pepper
1 Large Egg
1/4 cup water
1 Tbsp Olive Oil

Preheat the oven to 425 degrees F
Cut the chicken breast in half (horizontally) and tenderize each piece.
Combine the almond flour, sea salt, garlic, pepper, and lemon zest. Mix well.
In a small bowl mix water and egg together and stir.   Dip each piece of chicken in the egg mix and then dip it in the flour mix.   Heat oil in skillet (if you have an oven safe skillet that works best) and place each piece of chicken on the skillet... cook for 4-5 min.  Then turn and place skillet into the oven and back for 12-15 min.  Chicken Temp should be at least 165 degrees.
**If you do not have a oven safe skillet you  a regular stove top skillet and then place chicken on to a baking dish later.

Holiday Week Tips!

Here are 7 Tips to help you get thru a Holiday week, without completely blowing your progress!! 

1. Plan ahead!!! 

Planning ahead is KEY anytime it comes to health/fitness.  Chances are you probably don't have a holiday party EVERY day this week, right?!  (And if you do, you have one heck of an exciting life compared to mine.  ;) ).   So, make it a point to eat super clean and follow the plan on the days you are NOT partying.  Then, on the days you do have something to go to think about what the party or get together will be like.... What kind of foods will be there, what are the people going to be like, will there be soda or alcoholic beverages?  Maybe you decide to make that day/party your cheat meal or day. That's totally fine! 

2. Don't starve yourself.

Try eating something healthy at home before an occasion involving food, that way you aren't starving when you get there.... and will be less likely to over indulge.   I usually like to eat a piece of fruit, a yogurt, or other light snack before I go. This helps to curb hunger so you don’t binge when you’re there. If the event is in the evening, make sure to have a healthy breakfast and lunch.

3. Bring your own dish.

If you're afraid there won't be an healthy options, offer to bring a healthy appetizer or dish to serve at the main meal.  OR if you're hosting make a few healthy options. This way, you are assured there will be something “safe” to eat. Others will appreciate your efforts, too!

4. Drink TONS of water!!! 

Water is going to make you feel fuller.... plus it will help flush out those cheats you do decide to take advantage of!!!  :) 

5. Exercise

Make sure you are sticking with your normal workout schedule and maybe try to add an extra workout in if you can.  A little extra cardio is never a bad things, especially when you plan on ENJOYING a lot of good foods!!   PLUS exercise can help you cope with stress and depression, which are common for many people during the holidays. 

6.  Make smart substitutions. 

Practice making your favorite dishes a little healthier.  Cut the sugar by one-third in the recipe.  Use trans-fat-free margarine instead of lard or butter. Use one percent or evaporated skim milk instead of whole milk or cream.  There's almost always a healthy substitute.  

7. Limit leftovers 

If you are hosting the event, you'll want to try to make your home a safe haven afterwards. Send your guests home with the high-calorie leftovers. There are enough temptations outside the house. There is no need to make your home a difficult place to maintain control.

AND lastly.... HAVE FUN and don't stress!!!  A single day of overeating is NOT going to make or break your eating plan. It takes days of overeating to gain weight. If you overindulge at a holiday meal, put it behind you. Return to your usual eating plan the next day, and leave your guilt behind.  Celebrate the TRUE meaning of the Holiday... Try to give food less importance by focusing on what the holidays are really about and enjoy the time you get to spend with family and friends. :)

Healthy Candy Bar?

HOLD UP!! Where are all my CHOCOLATE LOVERS?!!  You have GOT to try these!!!

I'm a sucker for ANYTHING chocolate but I have to admit I'm always a little skeptical to try new "homemade", "healthy" things.  BUT since my friend Staci (stacioleary.blogspot.com) recommended them and there was ONLY 4 ingredients, I thought I'd give them a try!!  AND I was pleasantly surprised AND the kids LOVED them too!

Give them a try and let us know what YOU think!  

  • 1 tsp Natural Peanut Butter
  • 1 tsp Raw Honey 
  • 1 tsp melted Coconut Oil
  • 1 tsp Cocoa Powder
Mix all ingredients together until smooth.  Pour into a small plastic tray or even a Tupperware lid will work.  Freeze it!  It only takes about 15 min to freeze but you can leave it in the freezer until you're ready to eat it!  


In the words of my Daughter... "Oh, Mom, these are SOO GOOOD... we should make them everyday!!"

Can't Stop, Won't Stop!

"One day I just woke up and decided I didn't want to feel like that anymore.... or EVER again. So I changed..."
AND it was the BEST decision I've ever made for myself. Sometimes I wonder how I would feel or what I'd be doing if I didn't wake up that day a decide to change.... I don't know why that particular day was any different than the rest, I mean I had felt horrible about myself for a long time and I heard about Shakeology and T25 in the past but it wasn't until 'that day' that I decided to JUST DO IT!
It's not always easy and I know I still have a long ways to go and I know not everyone understands or agrees with what I do BUT I've come this far and feel so good... NOTHING can stop me now.
When you're ready to make that change, just know that, YOU CAN DO ANYTHING YOU PUT YOUR MIND TO..... AND I AM HERE AND HAPPY TO HELP, IF YOU NEED IT!

Holiday "Waistline" Survival Guide

It’s that time of year again, ALREADY!!  We all have some sort of Holiday party, family gathering, or maybe vacation coming up. And I know there are a few of you out there who are like me and want to try to make it thru the Holidays without gaining weight..... Well, with a little careful thought and planning, you can avoid holiday weight gain. Here are some things that you can try as your getting prepared for your holiday get together: 


1. Plan ahead!!! 

Planning ahead is KEY anytime it comes to health/fitness.  Think about what the party or get together will be like.... What kind of foods will be there, what are the people going to be like, will there be soda or alcoholic beverages?  Thinking about it and know ahead of time what you will be dealing with will help you stick to a plan.  

2. Portion Control

It's OK to indulge every once in a while, but if you're trying to keep it healthy, portion control is the best way for that.  You can still enjoy the potatoes, noodles, desserts, etc. just limit the amount. Make it a point to have only ONE plate.... Over half of your plate should be filled with meats or veggies, the other half (or less) take advantage of the starchy carbs and dessert.  The "See Your Plate" method works great here... basically make sure you can still see your plate when your finished dishing out your food.   ((** Listen to your breathing. When you sigh or begin to breathe a little deeper, your body has had enough to eat. Listen to the message your body is sending and let it guide you to realize you've had enough)).  Now, if there's alcohol, try sticking with ONE glass, followed by a glass of water. More importantly, focus on enjoying good conversation, not on eating.

Sign up for a 5K or some sort of fitness challenge. This will motivate you to focus on exercise and keep your body moving. I've got a couple in mind, if you need suggestions ;)  Besides burning extra calories, exercise can help you cope with stress and depression, which are common for many people during the holidays. Check with your doctor before you increase your activity level.

Crock Pot Chicken Tortilla Soup!

I'm always so skeptical when I try new recipes, I don't know why I usually LOVE them! This is so good! Even if you didn't put the tortillas in it, it would still be amazing!  Give it a try and let me know what you think in the comments below!   :)  
Healthy Crock Pot Chicken Tortilla Soup
Ingredients:
    2-3 uncooked boneless, skinless chicken breasts
    1 (32oz) cans chicken broth
    1 can Rotel
    1 (15 oz) can black beans, drained & rinsed
    2 cloves garlic, minced
    1 can corn 
    1 tsp cumin
    1 tsp chili powder
    1 tsp salt
    1/4 tsp pepper

Optional Toppings
·     tortillas
    Diced roma tomatoes
    diced avocado
    chopped green onions
    fresh Cilantro
Directions:

Dump all ingredients in crock pot and cook on high 3-4 hours or low for 6-8 hours. Once the chicken is done, shred, place back in pot.  Serve with toppings of choice!

Apple-Banana-Oatmeal Cookies

If you've got a sweet craving, but want to try to keep it healthy, THIS will be perfect for you!   :)  


1/2 cup butter
1/4 cup applesauce
1 cup Stevia (you can use regular Sugar but I like Stevia to keep it healthier.)
3/4 cup pack Brown Sugar
2 large Eggs
2 bananas
1 teaspoon vanilla
2 cups Flour  (I didn't have regular flour so I used Oat Flour and they turned out just as good!)
1 1/2 teaspoon Cinnamon
1/2 teaspoon sea salt
3 1/2 cups Quick Oats
1 large Apple, peeled and diced
1 cup Raisins (Optional)

Instructions:
Pre-heat the oven to 350.  Mash bananas.  Mix bananas, butter, applesauce, eggs, and vanilla is mixing bowl. Set aside.  In a larger bowl mix Stevia, brown sugar, flour, cinnamon, and salt.  Combined wet and dry ingredients well. Add apples, oats, and raisins.  Drop small balls of batter on lightly greased baking sheet.  Bake for 9-11 min.   Let cool and ENJOY!!   :)

Easy Potato Soup

Very Simple and really good!! This was the first time I'd ever made potato soup so I wasn't really sure how it was going to turn out, but it was actually really good!!  And the kids loved it! :)


  • 2 cups Chicken Broth
  • 6-7 Red Potatoes, diced 
  • 2 Celery Stalks, diced
  • 1 onion, diced (optional)
  • 1 small carrot, diced
  • 1 cup 1% milk
  • 1/2 teaspoon Italian Seasoning
  • Pinch of Sea Salt to taste
  • Pinch of Black Pepper to taste
Instructions:
Heat Chicken Broth in a large sauce pan.  While it's heating cut up the potatoes, celery, onions, and carrots. Add veggies to sauce pan with heated chicken broth, cover and let cook for 20 minutes, stirring occasionally. Then add milk and seasonings, cover a cook for 5 more mins and ENJOY!!  :)

Can you believe the Holiday's on is upon us already.... How in the heck is it that time of the year again, already???  ...I don't know if you know this or not but the average person gains between 10-15lbs between Halloween and New Years... I will NOT be one of those people this year.... I, personally, am committed to making this holiday season my healthiest yet by not just maintaining but losing some too!! And I want to help YOU do that too!!

Crock Pot Veggie Soup!



To be honest, I've never made veggie soup from scratch before. So, I wasn't sure how it was going to turn out.  But it actually ended up being really good!  :) 



• 4 large carrots, sliced • 1/2 bunch of celery with leaves, chopped • 2 medium sized onions, chopped (optional, I didn't add because my husband doesn't do onions.) • 2 cups small head of broccoli, chopped • 1 cup freezer corn, drained • 2 cups fresh or frozen peas • 2 cups fresh or frozen fine green beans, cut into bite sized pieces • 3 potatoes, scrubbed and diced with skin on • 10 cups of water • 3 Tbsp. tomato paste • 1/4 cup dried basil (I know that seems like a lot, but it adds so much wonderful flavor to the soup) • 2 Tbsp. sea salt • 2 Tbsp. black pepper
. 1 tsp garlic powder
• 1/4Tbsp. crushed red pepper flakes (optional)
Instructions Place ALL ingredients in crock pot. Cook on low for 4-6 hours and ENJOY!! :)

For the longest time I told myself "I can't", "There's no way I can do that...." I had so many excuses as to why I couldn't lose weight and get into shape... And anytime I'd "try" to lose weight it would never last long because I'd come up with another excuses and fall back into my old bad habits. But one day I woke up and KNEW something NEEDED to change. I hated trying on clothes, I hated going places, I was the heaviest I'd ever been, and I just didn't feel comfortable in my own skin. So right then and there I told myself I would NEVER feel like this again. I may not be near where I want to be yet, but I'm ok with that, because, right now, I'm so much better than I was.... I'm doing this more ME, I'll get there when I get there. Until then I'll just sit back, follow my meal plan, workout, and enjoy the ride!!

Veggie/Egg Muffins

Veggie/Egg Muffins 

They don't look very pretty when they're done, but they do taste really good!! 

  • 6 eggs 
  • 1 medium pepper (all I had in the house was mini, so I used 2) 
  • 1/2 cup of spinach 
  • salt/pepper or any other spice you'd like 
Mix it all in the blender, pour into muffin tin, and bake for 20-25min. 
Makes 6 muffins.

These are so simple and really good!! Especially if you've got a sweet craving!! And perfect for an after school snack for this kids!

Only 3 Ingredients!! 
▶1 3/4 Cup Quick Oat
▶ 1 Cup Natural Peanut Butter
▶ 1/2 Cup Raw Honey

Heat the PB & Honey in microwave for 30 -45 seconds. Mix in oats. Press on to a flat pan. Let set for 10 min in fridge and ENJOY!! smile emotico

Crockpot Spicy Maple Shredded Chicken

Spicy Maple Shredded Chicken








I love trying new recipes, especially when it's a new way to spice up chicken!   Here's what we're having tonight!  :) 




Spicy Maple BBQ Sauce


  • 4 Tablespoon Olive Oil
  • 1 teaspoon garlic powder
  • 4 cups Tomato Juice
  • 1/2 cup 100% Pure Maple Syrup
  • 3/4 cup balsamic vinegar
  • 1 1/2  Tablespoons Dijon mustard
  • 4 teaspoons cayenne pepper
  • 4 teaspoons chili powder
  • Sea salt to taste
In a medium sauce pan add olive oil and garlic powder, let simmer for about 1 minute. Add all other ingredients, stir and simmer until sauce thickens, roughly 30 minutes.  Allow to cook to room temp and store in the refrigerator until ready to use.

Makes roughly 4 cups of BBQ Sauce.

 Spicy Maple BBQ Shredded Chicken


- 6-8 Boneless Chicken Breast
- 1 3/4 cup (above) Spicy Maple BBQ sauce

Trim fat from roast, if necessary. Place chicken breasts into a 3 or 4 quart slow cooker.  Pour BBQ sauce over the top. Cover and cook on low for 6-7 hours (or on high for 4-5 hours.)
When the chicken in done cooking shred the chicken (A hand mixer works perfect for this!) Place the meat back into the slower cooker and let it marinate in the sauce for a few minutes.  Serve on a corn tortilla shell or eat it plan with a side of veggies!

FEAR

The dictionary's definition of FEAR is - "an unpleasant emotion caused by the belief that someone or something is dangerous, likely to cause pain, or a threat".


But really when you think about it FEAR has 2 different meanings.... 

1.) Forget Everything And Run
2.) Face Everything And Rise  

It's totally up to YOU which you choose to do when FEAR shows itself. 


Since I like to be as upfront and transparent as I can be with all of you, I'm just going to start out by saying "I KNOW I could be A LOT farther along with my own personal fitness & my coaching biz than I am right now."  I've just recently come to realize I'm just scared....

>>>> I fear that if I do actually reach my own personal fitness goal, it will discourage others instead of inspire them
>>>> I fear that people will mistake the openness of my journey as a gimmick rather than seeing that I truly want to help others succeed
>>>> I fear that I'm not yet "fit" enough to help someone else with their fitness journey.
>>>> I fear, that once I do start growing a team, I won't have enough knowledge or leadership skills to help them grow.
>>>> I fear that I am letting my family down by not yet reaching those goals I have set for myself.
>>>> I'm afraid that if I do succeed I might just let someone else down. 

BUT  from this moment on I say F*CK FEAR!! I've got to let ALL of that go!  I will never reach my highest potential if I keep letting FEAR take over.  

>>>> I WILL reach my fitness goals!!
>>>> I AM inspiring people by sharing my story!!
>>>> I AM fit & determined enough to help someone else reach their goals!! 
>>>> I DO HAVE enough knowledge & leadership skills to build an empire

Sometimes WE ALL need a DAILY (maybe hourly) reminder of our true potential. DON"T let FEAR of failure or FEAR of success hold you back!  You are your only limitation - get out of you own head that GET IT DONE!!  Even if you're scared GO FOR IT! Pushing past and overcoming our FEARS only makes us STRONGER and WISER!!   

SUCCESS happens ONE day at a time -  YOU got this!!  

 Dream it. Believe it. Achieve it!

My Top 5 Weight Loss Tips!


Here are a few things I learned from Chalene Johnson!! I've been trying to incorporate these things into my everyday to help me on my own fitness journey.... Try them out!! Hopefully at least one of these will help you too!!  :)  

1. Purge the Pantry - Get rid of ALL the "bad" food temptations in your house. Out of sight, out of mind, RIGHT!!?

2. Schedule your workouts - Seriously, put it in your daily schedule and keep your workout "appointment" considered it just as important as a Dr. appt or meeting with your boss.

3. Get a motivated accountability partner - IF you have no one close to you to help keep you accountable... ASK ME!! I'd love to help you!

4. Don't eat before you go to bed - Eating before bed gives our body immediate fuel to be used as energy... the only problem is we don’t need energy at this time. The food that is not used for normal body processes is left to be digested by the body and is eventually stored. This is a lot of activity for a body that wants to be resting!

Self-discipline is something I'm starting to work very hard at.... it's NOT easy!!! I have to keep telling myself this, so I thought I'd also share with you all too. smile emoticon IT'S HARD TO FORM NEW, "GOOD" HABITS!!! BUT once you master them they get easier to do without even thinking about it.
Just remember... Everything gets harder before it gets easy!! Keeping going!! It WILL be worth it!!!

What Motivates YOU??

People ask me that all the time and really it's pretty simple:
1. The fact that I'm not where I want to be yet
2. The fear that if I quit, I'll go back to my old/bad habits and lose everything I've been working for
3. I LOVE seeing other people succeed! And I want to show others that they can do exactly what I'm doing to get to where they want to be!

That's really it! I think about each of those thing EVERYDAY and it makes me want to push harder.  So, I'm really asking, WHAT MOTIVATES YOU??

Invest in YOURSELF!

Lately, I've been in this 'funk' because I've been obsessing over how for I have to go before I reach my ultimate goal... Sometimes I forget how far I've actually come in 18 months. Sometimes I feel like I could have worked hard and I would be farther along than I am now. BUT then I stop at look back at what/how I used to be.
When I took the pic on the left I was:
~MISERABLE
~ I hated shopping...
~ I hated looking in the mirror
~ I hated going places where people would 'see' me
~ I cried all the time
~ I felt so insecure and self-conscious
~ I ate EVERYTHING without even thinking about it
~ Tired & Grouchy ALL the time
I KNEW I NEEDED TO CHANGE!!

When I took this pic this morning I thought about how much better I feel about myself, even if I know I've got A LOT of work to do.
~ I feel amazing
~ I feel healthy & strong
~ I'm slowly gaining confidence by the day
~ When I cry now it's mostly because I'm happy
~ I'm very conscious about what I eat... even if it is not so healthy, I at least know how it's affecting me. Plus I know I'm getting tons of nutrition each day I drink my ShakeO
~ Let's be honest I'm still tired and grouchy sometimes, just not as bad or often. ;)

Seriously, if I can come this far I know I can/WILL get to where I want to be AND SO CAN YOU!!! IF YOU are ready to make a change YOU CAN DO IT!!! You've just got to start believing in yourself! I want you to know that I AM HERE TO HELP!! I WANT YOU to get reach your goals too!!
 
^^^That^^^ being said I am looking for a few ladies WHO WANTS/NEEDS TO LOSE 30+ LBS!!! I am working on a new 12 week support group for those of you who have 30+ lbs to lose and are ready to commit and get SERIOUS results!!

We will be starting Sept 28th… that will get us to the week of Christmas!! Who doesn’t want to go to their family/work Christmas parties and get tons of compliments for looking so good, right!! Plus doing it together will help us get thru the Holidays without gaining weight, which is what usually happens for me!

I want to be able to work with each of you 1X1 so we can really focus on getting you awesome results!! I've had a lot of interest in this already so as of right now I only have 10 more spot available!!!

Meal Prep for 21 Day Fix

I have found that eating healthy just doesn't work for me UNLESS I plan ahead and meal prep!! SO today I meal prep!! :D

*** BBQ Chicken (Homemade BBQ sauce)

My sister will be getting married in roughly 6 weeks!! That's gives me enough time to do 2 rounds of 21 Day Fix!! My goal by the wedding is 15-20lbs lighter... that's 2.5-3.5lbs a week. It's NOT going to be easy but I AM going to stick with it this time to make it happen!! My day 1 starts TODAY!
