Simple, Easy, Healhty Chicken Potato Broccoli!

Chicken, red potatoes, broccoli!!

Simple, easy & delicious!

  • 3 chicken breast, diced
  • 2 red potatoes, diced
  • Broccoli
  • Salt/Pepper...
  • Olive Oil
Preheat the oven to 350.  Coat pan with Olive Oil spray. Dice thawed chicken breast. Place in baking dish.  Dice red potatoes. Place in baking dish.  Cut up broccoli and place in baking dish.  Sprinkle with salt and pepper and then drizzle olive oil over the entire dish.  Cover with tin foil and Cook @ 350 for 1 hour!   You can prepare ahead of time and put in fridge until ready to cook or cut right away.  Either way it's ready to eat as soon as you get it out of the oven!  :)

So, what's the deal with this Shakeology stuff anyway??

What is Shakeology? 

Shakeology is a full meal replacement that includes more than 70 natural, nutritious ingredients.  Although, there's not actually anything in Shakeology that is going to "make" you lose weight, it's packed full of things that will help improve your nutrition!    Let's see if I can break down just how much nutrition you're getting.   ONE serving of Shakeology would be the same as eating... 

A bowl of exotic fruit (including GOJI and ACAI)
4 Cups of Raw Broccoli
7 Whole Carrots
10 Cups of Raw Cauliflower
3 Cups of Romaine Lettuce

4 Cups of Red Radishes
4 Cups of Nonfat Yogurt
AND... a shot of wheat grass
(Which comes to roughly $42 per serving)

Why do I drink Shakeology?? 

If you ask a handful of people you'll probably get a handful of reason as to why or why not you should drink Shakeology.  All I can tell you is what it has done and will continue to do for ME! 
The answer is really pretty simple... When I drink it I just feel better! :) That's the truth. There's been a couple times when I didn't drink it for 4 or 5 days in a row and when I do that I just feel BLAH, I guess you could say.   I'll be honest, when I first started drinking it (May 2014) I was skeptical but after drinking it continuously for a few weeks or so I could tell a huge difference!  I have more energy, I have less cravings,  my digestion has dramatically changed, my skin just feels better, and I may be jinxing myself by saying this but I haven't had more than a sniffle since I started drinking it!
The biggest objection, about Shakeology, I hear is "It's too expensive!".   Yes, I know it's pretty expensive stuff and there's all kinds of shakes that out there that are 'cheaper', BUT if it's helping me get/stay healthier, in a natural way, it's well worth the extra $$ to me!  :)

Chicken Salad

How to make a healthier chicken salad!


·         2 chicken breast, cooked and cut into cubes

·         2 celery stalks, chopped

·         ¼ red onion, chopped

·         ½ cup seedless grapes, quartered

·         ½ cup Greek yogurt

·         1 tsp garlic powder
 ·         1 tsp Salt/pepper

Cook Chicken Breast in a skillet with water OR bake in the oven. (Which ever you prefer!) Then dice chicken into cubes and let cool.
 Quarter 1/2 cup of grapes and dice 2 celery stalks.
In a large bowl, mix diced chicken, celery, and grapes with the yogurt, pepper, and garlic powder!  (You can add diced onions if you would like too!) And Enjoy!  You can serve as is or in a wrap! :) Makes 4 servings!

Healthier Banana Muffins

Mini Oatmeal Banana Muffins

Ummm!! These are sooo good!! I was just going to make them for the kids to try as a "healthier" snack idea, but they smell soo good, I couldn't resist!! I had 4 and Kylee kept trying to sneak another one! Thank goodness they are mini! I had to put the rest in the freezer, out of sight, so I wouldn't eat anymore and I thought I could use them when I have one of those cravings I can't kick.. and I guess I could share with the kids, since they seem to like them so much too!   :)    I made some with chocolate chips, both are amazing!! :)   Honestly, when I was mixing this together I really didn't think they were going to turn out very good, but I was wrong! I couldn't get my blender to get the oats "smooth" and it seemed to be like they would be dry, but they really aren't!  Give them a try and let me know what you think!  :)
·         2.5 cups old fashioned oats
·         1 cup Greek yogurt
·         2 eggs
·         ¾ cup stevia
·         1.5 teaspoon baking powder
·         ½ teaspoon baking soda
·         2 ripe bananas
 Preheat oven to 400 degrees. Spray muffin tin with non-stick cooking spray or line 12 muffin tins liners. Place all of the ingredients, including bananas in a blender or food processor, and blend until oats are smooth.  Divide batter among cupcake liners, and bake for 15-20 minutes, or until toothpick comes out clean.   AND ENJOY!!  :)
