Apple Crisp

Apple Crisp 4-5 small apples
1 cup Stevia
1/2 cup Flour
1/2 cup Butter
Cinnamon
Nutmeg
Peal & slice apples into pie pan. Pour 1/2 cup stevia over apples and sprinkle cinnamon & nutmeg on top. Mix flour, 1/2 cup stevia, & butter together. Crumble mix on top. Bake at 350 for 45 min.

Crockpot Chicken Fajitas

Crockpot Chicken Fajitas!


·         1 lb (2 or 3) of Chicken Breasts

·         3 Peppers (Green, Red & Yellow), sliced

·         1 Onion, sliced

·         1 Package of Taco Seasoning

·         Flour or corn tortillas

·         Toppings - sour cream (or Plain Greek Yogurt), cheese, guacamole, Lettuce, Tomatoes, etc.

Instructions

1.      Slice peppers and onions then place them on the bottom of the crock pot

2.      Put Chicken on top of peppers and onions

3.      Sprinkle taco seasoning on the top

4.      Cook on low for 6-8 hrs (or high for 3-4)

5.      Shred everything up and mix together

6.      Serve with tortillas and all the toppings - sour cream, guacamole, cheese, lettuce, etc.
 
21 Day Fix Approved!  1 Red, 1 Green, 1 Blue (if use tortilla 1 Yellow)

Healthier Parmesan Chicken



 - 4 thawed Chicken Breast
- 1 Tbsp lemon juice...
- 1 1/2 tsp garlic powder
- 1/2 cup Parmesan cheese

Preheat the oven to 400. In a ziplock bag mix chicken breast, lemon juice, and garlic powder until the chicken breast is completely covered. Then use the Parmesan cheese as a "breading". Bake for about 45 minutes

1 thawed chicken breast (flattened)
1 Tbsp marinara (I used homemade 21 day fix approved marinara)
Bell Pepper rings (all I had was mini peppers
2 oz mozzarella cheese ...
A few dashes of Garlic Powder
Parsley
Preheat oven to 350. Spray baking sheet with Olive Oil. Put chicken breast on baking sheet top with marinara, peppers, cheese, garlic, and parsley. Bake for 20-25 min. (Can add mushrooms or other veggies or meats if you'd like)

If you're doing 21 Day Fix this would be 1 Red, 1 Green, 1 Blue

Never give up!!

So you made a mistake and went a little over board on your 'cheat meal' and ended up having a 'cheat week'??  It's ok!!  The most important thing is DO NOT GIVE UP!!  Get back with it TODAY, no excuses!  Making a mistake doesn't mean you should just quit.... you  learn from it and start back up again!  :)

Think you can and you WILL!

As I was thumbing thru "SHAPE" fitness magazine I came across an article about something I talk about all the time on my Facebook page and I believe to be 100% accurate!!   Here's a few tid-bits of the article!

Think Strong, Be Strong

 "There's such thing as fitness self-esteem, an you want it because having this mental strength may help get you a better body, a new study revealed."
"A group of women, ages 18-30, with similar BMIs, and who did comparable amounts of exercise each week... they found that those who thought of themselves as fit and strong were able to run a little longer and lift a little heavier weights than those less self-assured."
"Truly believing that you CAN accomplish a physical task that takes endurance and strength allows you not to be afraid to put in more effort."

This all falls hand in hand with "Think positive things and positive things WILL happen", I have said that over and over again thru the past months. If you need a fitness confidence boost start with something small, like... raise the incline of your treadmill a notch, or tighten the resistance on your spin bike, or use a slightly heavier weight next time.  Starting out with these small "wins" will help you drastically with your confidence!!   Now get to work and let us know what confident boosters you're going to try!  :)

Mini Meatloaf

Mini Meatloaves


-1lb lean ground beef
-1/2 yellow onion, chopped

- 2 egg whites
- 1/2 cup quick oats
- 1/4 cup ketchup
- 1/4 cup tomato sauce
- Salt, pepper and garlic powder to taste
***I chopped an orange bell pepper and put at the bottom of the cups

Spray muffin tin with nonstick spray. Mix all ingredients for meat then ball up and place on top of peppers(if you choose to do peppers). Drizzle ketchup on the top of the meat. Bake at 400 for 35-40 minutes or until meat is cooked. 


And if you're doing 21 Day Fix these are considered 1red, 1/4 green, and 1/2 yellow for 2 mini meatloaves!  :)
