Mini Meatloaf

Mini Meatloaves


-1lb lean ground beef
-1/2 yellow onion, chopped

- 2 egg whites
- 1/2 cup quick oats
- 1/4 cup ketchup
- 1/4 cup tomato sauce
- Salt, pepper and garlic powder to taste
***I chopped an orange bell pepper and put at the bottom of the cups

Spray muffin tin with nonstick spray. Mix all ingredients for meat then ball up and place on top of peppers(if you choose to do peppers). Drizzle ketchup on the top of the meat. Bake at 400 for 35-40 minutes or until meat is cooked. 


And if you're doing 21 Day Fix these are considered 1red, 1/4 green, and 1/2 yellow for 2 mini meatloaves!  :)

  6. Melanie you could try replacing with oat bran... I've not tried it. So if you do please let me know how it turns out. :)

  9. Just to clarify, the ketchup is only for the top right?

    1. Actually you can do either way! I've done both.... It's really all about your preference. You can drizzle it all on top or cook it in the meatloaf or even a little bit of both. :)

  10. I used steel cut oats because I didn't have rolled oats. Still came out great! I used 1/4 cup scoop, came out more the size of cupcakes, made 12.

    1. Quick oats or Oatmeal.... There's several different kinds I like to use the 1-minutes quick oats, they just tastes better to me. You can get them at any food store by they cereals. :)

    3. breadcrumbs of your choice or crackers work well. A grain or non grain binder will wk in meatloaf. i used brown rice bread crumbs and get a super moist meatloaf

    1. Since there's such a small amount to make the entire recipe the amount in each muffin is so small that it really wouldn't count. :)

  14. I would think that since for the whole recipe its only 1/4 of tomato sauce that it would be so minimal that you really wouldn't need to count it right?

    1. I have made them before and used a salad or cooked spaghetti squash with tomato sauce as a side. You can really do any vegetable and it would be good! I am loving roasted butternut squash so I have been eating that with a lot of different stuff!

  22. Meat loaf is my husbands favorite. I usually put the night before dinner into his lunch next day. This would be a great protein for him and his favorite. I do not particularly like meat loaf, but this I will try. The portion looks just right for me. Thank you for the recipe

  27. I think a problem might be with a person trying to loose weight for the temptation to eat 6-8 instead of sticking with one portion of only 2. Otherwise can be a healthy choice, and can be low fat, as compared to a fat-laden, high calorie hamburger.

    1. I would freeze after you cook... that way you can just pop them in the microwave and go!

  32. Yoyu give the values for the 21 day fix diet, why not weight watchers smart points? I'm down 34 pounds and need to get about 20 more off. I would love to try this, but need to know the smart point value.

    1. Hi, I'm not the recipe creator but I will take a stab at this anyway... if the recipe makes 8 mini meatloaves, that means only 2 ounces of meat per loaf. When making a meat dish, usually 4 oz. of whatever you are cooking is considered 1 red container.

  39. What I do with them is after they cool (we have them hot for dinner on meal prep night) I put them in my bento boxes as part of my weekly meal prep. Makes it much easier to grab and go the rest of the week since the bf and I have different schedules.

  40. I absolutely LOVE this recipe! I have made it using lean ground beef and lean ground turkey...both are excellent! I also used wheat cracker crumbs instead of oats! Even the mister and our 8 yo daughter approved!! YUMMMM!
