Spicy Maple BBQ Sauce
- 4 Tablespoon Olive Oil
- 1 teaspoon garlic powder
- 4 cups Tomato Juice
- 1/2 cup 100% Pure Maple Syrup
- 3/4 cup balsamic vinegar
- 1 1/2 Tablespoons Dijon mustard
- 4 teaspoons cayenne pepper
- 4 teaspoons chili powder
- Sea salt to taste
Makes roughly 4 cups of BBQ Sauce.
Spicy Maple BBQ Shredded Chicken
- 6-8 Boneless Chicken Breast
- 1 3/4 cup (above) Spicy Maple BBQ sauce
Trim fat from roast, if necessary. Place chicken breasts into a 3 or 4 quart slow cooker. Pour BBQ sauce over the top. Cover and cook on low for 6-7 hours (or on high for 4-5 hours.)
When the chicken in done cooking shred the chicken (A hand mixer works perfect for this!) Place the meat back into the slower cooker and let it marinate in the sauce for a few minutes. Serve on a corn tortilla shell or eat it plan with a side of veggies!
